Courgette Cake

Requested by @fionasparrow on Twitter who has too many courgettes!!

This is my Mum’s recipe, don’t know where she got it from.

I’m not usually a recipe blogger and my courgette plant isn’t producing enough for me to make one for photo!

But, I promise this is a lovely moist chocolate cake:

8 oz grated courgette

4 oz chopped dates

2 oz raisins

4 tbsp clear honey

4 oz margarine (I use stork)

4 oz light brown sugar (white, if you haven’t got any brown)

1 egg

8 oz brown flour

2 tsp baking powder

Heat oven to 170*C

grease and line a 9 inch shallow cake tin

Stir courgette, dates, raisins and honey together.

In a separate bowl cream margarine and sugar.  Add egg and 2 tblsp water, beat until smooth and glossy.

Fold in sifted flour and baking powder.

Fold in Courgette mixture.

Bake in tin for 55-60 minutes.
